Lesson 2A: Ways of cooking and cooking equipment

1. 10.1 Listen to the first part of an interview with Lubna Aladib. What’s her job? Why is her job important?

Answer:
She is a food stylist. Her job is important because it can influence if people eat in a particular restaurant or not.

Check you understand the following words, then add them to the lists below.

3. 10.2 Listen to the second part of the interview again and answer the questions.

  1. What’s the best way to cook vegetables to look good in photos?
    Answer: Steam them for a few minutes so they’re still quite raw and colourful.

  2. What can you do to make sure meat looks juicy in photos?
    Answer: Roast it with plenty of sauce.

  3. What did Lubna use instead of ice cream for a photo shoot?
    Answer: Potato with icing on top.

  4. How does Lubna add colour to her photos?
    Answer: With a tablecloth, herbs and spices.

5. Complete the recipe with words in the box. There is one extra word you don’t need.

Broccoli Alfredo Pasta
Ingredients: Pasta, 2 cups of broccoli, 1 tablespoon of butter, ½ cup of cream, ¾ cup of cheese, ½ teaspoon of garlic powder, fresh parsley.

  • Boil the pasta in water in a big saucepan for around 12 minutes.

  • Chop the broccoli into small pieces, then steam it for around four minutes until it’s soft and bright green.

  • Melt the butter in a frying pan, then add the garlic, the cheese and the cream. Heat gently for 3 to 4 minutes. Make sure you stir it all the time.

  • Combine the pasta and the broccoli, then pour the sauce over the top.

  • Decorate with the fresh parsley.

(The extra word is teaspoon – it is not used.)

6. Choose a dish from your country that you know how to make. Write the recipe.

7. SPEAKING Work in groups. Choose a popular meal and discuss the recipe and cooking instructions. Is this an easy meal to prepare? How would you prepare and decorate it to make sure it looks delicious in photographs?

When a young person decides they want to become a trainee chef, they don’t have to have any previous 1 experience.
Catering colleges want to help them to become a good chef, so often they don’t hold a formal 2 interview; instead the 3 candidates are invited to discuss the training course with the head chefs at the college. They are 4 looking for candidates who demonstrate enthusiasm, dedication and motivation. If the discussions go well, the candidates are then invited to demonstrate one of their favourite 5 recipes in the test kitchen. Head chefs will then decide which candidates they feel will benefit from the training 6 course they are offering.

5. Write the instructions for a simple recipe.

Make sure you include: ingredients, cooking equipment, timings.
